Everybody likes carrot, as it is one of vegetable that can be eaten raw. Carrot contains beta-carotene, a strong antioxidant that can prevent cancer. Regular consumption of carrots reduces cholesterol level which helps prevent heart related problems. Also, the carrots are good for eye sights, as it contains. Including carrots in your diet makes the skin softer and smoother. Thus carrot is good for our health in any forms.

  • Prep Time: less than 10 mins
  • Cook Time: 15 – 20 mins
  • Serves: 2

Ingredients needed:

  • Carrots – 4 nos (medium size)
  • Onion Medium size – 1
  • Green chilies – 2
  • Curry leaves few
  • Pepper powder – 1/2 tsp
  • Chili powder – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Mustard – 1 tsp
  • Channa dal -1/2 tsp
  • Fennel seeds – 1/2 tsp
  • Ginger garlic – Paste/Crushed – 1 tsp
  • Oil as needed
  • Salt as needed

Preparation:

  1. Cook 1 cup of rice with 2 1/4 cups of water so that each grains are separate. Keep aside. Or You can also use the left-over rice.
  2. Finely Chop or grate the carrots
  3. Finely chop the onions and Green chilies

 

Method :

  1. Heat oil in a kadai/pan, add mustard seeds, when it splutters, add urad dal, channa dal, fennel seeds, curry leaves, finely chopped onions,green chilies, ginger garlic paste/crushed and little salt
  2. Cook until Onion turns light brown, add Chopped/Grated carrots;  Add little water and close the lid for 10 minutes; Cook until carrot is soft.
  3. Once the carrot is cooked well, add pepper powder, chili powder, turmeric powder; sauté for 5 minutes
  4. Add cooked rice and mixed well. Check for salt; Garnish with Coriander leaves

Quick and easy carrot rice is ready. Serve hot with Potato fry / chips or Raita.
