Easy Vegetable Pulao / Pulav recipe

Veg pulao – My all-time lunch box or party recipe. We can make it easily in short time even if we are cooking for more than 5 people. Cutting vegetables is the only task for us. Remaining steps are easy and quick. Kids will love it as lunch box. Also, it is less spice for them to eat.

Let’s see how to make very easy vegetable pulao.

 

 

  • Prep Time: 30 mins
  • Total Time: 25 mins
  • Serves: 2

Ingredients needed:

  • Basmati rice – 1 cup
  • Chopped mixed vegetables – 1 cup to 1 & 1/4 cup
  • Onion – 1
  • Green chili – 3
  • Coconut milk (or plain water) – 1 & 1/2 cup
  • Salt – As needed
  • Garlic – 4 minced

To Temper:

  • Oil/Ghee – 1 tbsp.
  • Cardamom – 2
  • Cinnamon – 1-inch piece
  • Cloves – 2
  • Bay leaf – 1
  • Star anise -1

Instructions:

  • Soak basmati rice for 30 minutes.
  • Slice onion, green chilies. Chop vegetables – 1 small carrot, 8 beans, 1 potato, frozen peas and corn. Finely chop or mince garlic – 4 pods.
  • Heat a small pressure cooker, add oil/ghee and temper with the items given under to temper table.
  • Add onion, green chili, minced garlic and fry till transparent in medium flame.
  • Give it a stir for a minute and add the vegetables. Fry in medium flame for 2 mins. Add the rice, drained from water. Mix well.
  • Add salt, coconut milk (or water) and bring to boil. Pressure cook for Close the pressure cooker and keep the flame in lowest flame possible 10 to 15 minutes in low flame or 2 whistles in medium flame also.
  • Once the pressure subsides, open and fluff the pulao carefully and mix ghee.

Serve hot with Paneer butter masala or ketchup or any gravy.

Notes:

    • Cook only in medium flame to avoid burn
    • Soaking rice for more time gives soft rice and needs less water to get cooked, hence we get separate grains.
    • Vegetables can be any of your choice
    • Even paneer cubes can be added
    • Coconut milk adds nice flavor. You can also cook with plain water. Equally tastes good.
