Kaara Chutney / Milagai chutney is one of the easiest and tasty chutney. It suits well for Idly, Any Dosa, Appam and Paniyaram.

Onions – 2 nos
Tomato – 2 nos
Red chilies – 10 to 15 or as needed
Salt neededFor the seasoning
Gingelly Oil -3 tbsp
Mustard seeds -1 tsp
Urad dal -3/4 tsp - PLEASE WATCH THIS VIDEO FOR COMPLETE STEPS
Method
- If you want, you can saute the onions in oil for 2 minutes. Otherwise Grind together onion, tomato, red chilies, and salt to a smooth paste.
- Heat oil in a pan, add mustard seeds, when it splutters, add urad dal, and the grounded chutney.
- Cook on medium flame until the mixture oozes out oil and chutney gets thicken.
Note:
- Shallots / Pearl onions will be even more tasty
- Any cooking oil is fine. Gingelly / Sesame oil adds more taste; Since we are using more red chillies, gingelly oil helps to balance the hot.
- Should be on low to medium flame, otherwise it will be burnt
- This can be refrigerate for more than 3 days
- Every time you use is from refrigerator, Saute in an oil for 2 or 3 mins to retain the freshness
