Mutton Chukka / மட்டன் சுக்கா/ Mutton Varuval in Tamil

Ingredients needed:- 

  • Mutton/Lamb – 500 gm
  • Small onions /Shallots – 20 – 25 nos
  • Ginger Garlic paste – 1 tbsp
  • Turmeric powder – 1/2 tsp
  • Green chili – 2
  • Salt as needed
  • Gingelly Oil/ Nallennai – 2 tbsp

To Grind:

  • Cumin seeds – 1 tsp
  • Pepper corn – 2 tsp
  • Coriander seed – 1 tsp
  • Dry red chili – 3 or as required

Preparation:

  • Wash and clean the mutton well; keep it aside
  • Masala powder: Cumin Seeds, Pepper corns, Dry red chili, coriander seeds in a blender and grind it to a fine powder and keep it aside

Method:

  1. In a pressure cooker, add mutton pieces and the freshly ground masala, turmeric powder, required salt with 1/2 cup of water and cook for 3 – 4 whistles or until mutton cooks soft.
  2. Heat oil in a pan , add green chilies, curry leaves, shallots, salt and saute until shallots are golden and then add 1 tbsp ginger garlic paste and sauté it for a couple of minutes until the raw smell is gone
  3. Add the cooked mutton pieces along with the cooked water; cook for some more time until all the water has been evaporated and the mutton become a little dry

Delicious Mutton Roast / Mutton chukka is ready. Enjoy this with Pepper rasam or any rice varieties,  Dosa, and Chappathi

Note

  • Do not add more water to cook mutton, as we need to dry the chukka
  • Gingelly oil adds more taste to this recipe
  • Prefer shallots for chukka recipes. Especially for mutton recipes
  • Pressure cook the mutton first as I have mentioned and then fry it to make dry chukka
