Vegetable Quesadilla -Popular Mexican Food- Easy and Quick recipe

Mexican Vegetables Quesadillas Recipe is made from healthy and low-fat ingredients. Guaranteed delicious meal too. You can buy tortillas ready made from shop. But you can also use regular (old) roti’s (thin flat Indian bread). Both adults and children simply love the combination of cheese and fresh raw vegetables.

Serve Vegetarian Mexican Quesadilla along with the lettuce, Salsa, Sour creamDip, and Guacamole/Avocado dip for a wholesome dinner.

 

  • Prep Time: 20 mins
  • Total Time: 30 mins
  • Serves: 2 – 3

Ingredients needed:  

  • Tortillas – 2  or Leftover roti -2
  • Grated cheese – 1 cup
  • Capsicum/Green bell pepper – 1
  • Onions – 1
  • Tomatoes – 1
  • Mushrooms – 10 nos
  • Corn – 1/4 cup
  • Olive oil /Butter
  • Garlic – 4 -8 pods (optional)
  • Salt as needed
Store bought tortillas

 

Preparations:

  1. Chop the Vegetables cubed and slice the onions; Remove the seeds of tomatoes and cubed it
  2. Heat 1 tbsp of olive in a pan, add all the veggies, salt needed and 1 tsp of red chili powder. Saute until the veggies are soft and no moisture. (tomatoes should be added last)
  3. Heat tawa /griddle with little oil/butter; Lower the flame and Toast the tortillas both the sides lightly; One side should be toasted more than the other side
  4. Put in low flame and spread little cheese on one half of the cooked side of tortillas. Spread veggies on top of it.
  5. Spread cheese over the vegetables as desired and cover the tortillas with the other half, by folding. Press gently for few seconds to let the cheese melt.
  6. Flip carefully and press gently the other side.
  7. Transfer and cut into triangles with a pizza cutter or knife.

Serve hot with sour cream dip, salsa and Avocado dip as they serve in restaurants.

Avocado dip: –  Smashed avocado + Salt + few drops of lemon juice; Mix well

Salsa: – Finely chopped onions + finely chopped tomatoes+ coriander leaves+ salt + lemon juice

 

Sour cream – I have used store bought one

 

Notes:

  1. You can use butter or olive oil or any vegetable oil for this.
  2. Once the tawa is hot, toast the tortillas only on low to medium flame
  3. Use little salt while cooking vegetables, as cheese will have salt
  4. You can also use red chili flakes or pepper powder if you need it more spicy
  5. You can use any grated cheese that will melt and give stretchy texture.
  6. You can use homemade tortillas, or store bought one or regular chapatti/Roti (Rolled large and thick).
  7. Other vegetables that can be used: Zucchini, Olives, Other color bell peppers, egg plants
