Cauliflower soup – Creamy soup for lunch or dinner – Best Low Carb Soup

For lunch or dinner this Low Carb Creamy Cauliflower Soup is perfect to curb those cravings. Very easy to make soup and definitely will satisfy our cravings. Also, you feel full for longer time. I prefer to have this for dinner.  With 300+ calories, it is just 5g net carbs and 30+ fat (per serving) 

  • Prep time – less 10 mins
  • Cook time – 20 mins
  • Serves – 2



  • Cauliflower florets – 2 cups
  • Heavy cream – 1 cup or Thin Coconut milk – 2 cups
  • Butter – 1 Tbsp.
  • Garlic – 3 pods
  • Salt to taste
  • Pepper


  • Boil water in a pan
  • Cut the cauliflower into medium sized florets. You can use the tender stems as well
  • Soak the florets in hot water with little salt for 5 to 10 mins
  • Heat a tbsp. of butter in a pan and saute finely chopped garlic
  • Add in the cauliflower florets (water drained); Saute for 2 to 3 mins
  • Add half cup of water and heave cream.
    • This will give us a thick and creamy soup. If you like to have it waterier, add some water or thin coconut milk while cooking florets.
    • Do not add cold water while blending as it will spoil the taste of the soup.
  • Let it cook on a medium flame for 15 mins or until it is tender and soft
  • Allow it to cook little and then blend it with salt and pepper as needed. (Save few pieces of florets before blending it)
    • If you have hand blender or your regular blender can handle the hot mix, you can go ahead and blend it right away. Otherwise allow it to cool for sometime and then blend it.
  • If you want the soup to be hotter, microwave it for 2 to 5 mins before serving
  • Add in the saved cauliflower florets to the soup, spoonful of cream, salt and pepper while serving

Creamy Cauliflower soup is ready.


  • This measurement yields 2 servings.
  • Adjust garlic and pepper as per your taste wish
  • If you don’t have heavy cream or heavy whipping cream or double cream, you can simple make this with thin coconut milk.
