TOOR DAL FRY RECIPE || PARUPPU KADAIYAL – EASY RECIPE

Dal Fry is a popular Indian lentil recipe. This recipe uses Toor dal, which is also known as Arhar or Toovar dal. The dal is seasoned with variety of spices which takes the taste to next level. This can be served with steam rice and rasam or Roti/Chappathi.

Ingredients needed:

  • 1 cup toor dal, arahar dal
  • 2-1/2 cups water
  • Turmeric powder – 1/2 tsp
  • Salt as needed

For the seasoning:

  • Ghee / Clarified butter – 2 tbsp
  • Oil – 1 tsp
  • Onions medium size -1 (finely chopped)
  • Garlic pods – 3 to 5 (finely chopped)
  • Cumin seeds (jeera) – 1/2 tsp
  • Mustard seeds (kadugu) – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Curry leaves – few leaves
  • Whole dry red chili – 1
  • Green chili – 2
  • Hing / Asafetida powder – 1/2 tsp

Method :

  1. Wash the dal twice or thrice
  2. Pressure cook the dal for 3 to 5 whistles.
  3. Dal should cook soft and mushy
  4. Water measurement: For 1 cup of dal, add 3 cups of water

Seasoning:

  1. Heat the ghee in a pan. Once the ghee is hot, add mustard, urad dal, cumin seeds, red chili, curry leaves; Let it fry and splutter.
  2. Then add finely chopped garlic and fry until garlic cooked in oil. Then add finely chopped onions and green chili. Onion should turn very little brown.
  3. Pour the seasoning over the dal
  4. Alternative method: (this is the one I prefer) Pour the cooked dal to the seasoning and mix well.
  5. Let dal mix well with the seasoning / Tadka/Thaalippu.
  6. Garnish with one spoon of ghee and coriander leaves

Dal fry is ready, serve this Roti / Chappathi/Indian flat bread or with steamed rice, Rice.

Note

  • Hing powder/ Perungayam is a must; Since it is a DAL hing powder will helps in digestion
  • Skip Garlic If you don’t like it. Instead ginger can be added while seasoning
  • Pressure cook for as many as whistles until dal cooks mushy.
