Fish fry in Banana leaf – Kerala style fish fry – Meen Pollichathu

 

  • Prep Time: 15 mins
  • Cook Time: 30 – 45 mins
  • Serves: 1 or 2

Ingredients needed: 

  • King fish / Vanjaram meen – 1 piece
  • Big red Onion– 1
  • Turmeric powder – 1/2 tsp
  • Chili powder – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Curry leaves few
  • Salt to taste
  • Coconut oil
  • Mustard seeds – 1/4 tsp
  • Fennel seeds – 1/4 tsp
  • Banana leaves (atleast quarter of the leaves to wrap fish)

To grind:

  • Shallots – 3 nos
  • Tomato – 1/2
  • Ginger Garlic paste – 1 tsp
  • Green chili – 1
  • Whole pepper corns – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Fennel seeds – 1/2 tsp
  • Cinnamon – 1/2-inch piece
  • Cloves – 2 nos

 

Preparation:

  • Marinate fish fillet with little salt and turmeric powder; keep aside for 10 to 15 mins
  • Meantime, lets prepare the masala; Grind together the ingredients listed under “To grind”.
  • Heat pan with little coconut oil and fry fish for only 1 minute each side. This helps to remove the raw smell of the fish, before we start frying it with banana leaf. Keep aide.

 

Method:

  1. Masala preparation:
    1. Heat coconut oil in a pan; Season mustard seeds, cumin seeds,
    2. Once they splutter, add onion, curry leaves, and ground masala. Saute for 1 or 2 mins
    3. Add masala powders: Turmeric powder, chili powder and coriander powder
    4. Cook for 5 to 10 mins until the raw smell of the masala powder goes off, so add some water to cook and to avoid burnt.
    5. Fish fry masala is ready now
  2. Prepare the banana leaf: To make it flexible to wrap the fish without tearing it
    1. Either you can quickly dip the banana leaves in hot water
    2. Or expose it to the flame or how tawa quickly
  3. Let’s make the banana leaf wrap now:
    1. Put half of prepared masala gravy in the center of the banana leaf
    2. Place the fish fillet on it
    3. Again, put the remaining masala gravy on top of the fish
    4. Now fold the leaf by wrapping the fish; Either you can wrap it with thread or use tooth pick to lock the leaf. Make sure masala is not leaking out
  4. Fish fry:
    1. Heat a tsp of coconut oil in a dosa pan or iron skillet or wide heavy bottom pan
    2. Fry banana leaf folded fish piece on both the sides on a medium flame till the leaf gets brown in color or until fish gets cooked well
    3. Make sure to cover the pan while frying, as it might spray some hot liquids (Personal experience J )

 

Super curried fish fry is ready to serve.

Note

  • Adjust spice level as you prefer
  • Personally, I don’t prefer steaming the banana leaf wrapped fish. But this is one another option. Give a try and find out which works for you
