How to make Sambar without Dal – Low Carb| Keto recipes

Ever wonder we can make sambar without any dal? Yes, it is my all time favourite sambar. My mom used to make ven pongal and yellow pumpkin kootu on pongal festival day. I tried modifying the pumpkin too to a sambar. Trust me this is almost same as regular sambar. I even tried some other keto friendly sambar using cauliflower, bottle gourd/Lauki. But the yellow pumpkin wins the rest and becomes a huge hit in my home. My husband is a dosa and sambar lover. He has been missing his dosa sambar combination in keto. Once i made pumkin stir fry for cauliflower rice. Fortunately pumpkin was overcooked and was almost in a water consistency. He asked me if it was a sambar. I smiled at him and said yes. Thats how the sambar story came up. I am also doing other keto sambar using lauki and cauliflower at time for variation.

 

Note: As we all know, pumpkin is not allowed in keto because of its carbs content. But when you count you daily nutrition macros, you can always add or discard some ingredients to our diet. Similarly, every week Thursday i do fasting and eat only OMAD – one meal a day. So those days i took some liberty and make these kind of Indian style recipes. OMAD with this number of carbs will still meets our daily low carbs requirement.

For today, let see the keto sambar using yellow pumpkin.

Ingredients:

  • Yellow Pumpkin – 250 gms
  • Onion – 1
  • Tomato – 1
  • Green chilies – 2
  • Chili powder – 2 tsp
  • Coriander powder – 1 tsp
  • Cumin seeds – 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Asafetida / Hing powder – 1/2 tsp
  • Ghee – 1 tsp

For seasoning:

  • Ghee – 2 tsp
  • Mustard seeds- 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Fenugreek seeds – 1/2 tsp
  • Curry leaves – few
  • Red chili – 1
  • Any other Low carb vegetables for sambar like Drumstick, brinjal.
  • Tamrind juice – 2 tsp (optional)
