Ulundhu Kali /Uluntham Kali/ Black gram porridge – Healthiest food

Ulundhu kali is south Indian delight which is high in protein,low in fat and very good for women which helps to strengthen hip bones.

 

  • Prep Time: 5 minutes
  • Cook Time: 20 mins
  • Serves: 2 – 4

Ingredients needed: 

  • Ulundu kali powder – 1/2 cup
  • Jaggery/ Karupatti – 1/2 cup
  • Sesame oil/Gingelly oil – 2 tbsp
  • Water-2 cups

Ulundu Kali Flour Preparation:

  • Dry roast black urad dal and 200 gms of raw rice separately, until it is hot to touch and nice aroma comes
  • Once it is cool dowl, powder it
    • Either in rice mill/ flour mill or using grinder
  • Store it in an air tight box. This can be in our kitchen shelf for month time or in refrigerator for more than that

Method:

 

  1. Heat water to boil, add the palm jaggery and cook until it melts. Filter the impurities; keep it aside
  2. Mix 2 cups of water to the 1/2 cup of flour and ix well with no lumps
  3. Start cooking it in a medium flame. Stir continuously with forming any lumps
  4. Cook for 7 – 8 minutes; it gets thickens now; If you stop stirring, you will see the bubbles whooping out. It means that flour has cooked well
  5. Now add the melted palm jaggery and mix
  6. Keep adding gingelly oil little by little and stir continuously until it reaches kali consistency.
  7. Switch off the flame; Serve hot or cold as both tastes so good.

Note

  • You can also use palm jaggery or sugar jaggery
  • Adjust the jaggery level as per your need
  • Add pinch of salt and cardamom powder if needed
